It’s week 3 of Cocktail Month and for this post, I’m inspired by Bobby Flay and his recipe for a Frozen Mojito. I am a huge fan of mojitos – and dumping it in a blender and adding ice seemed like the perfect idea to me! I did add more lime juice than what the recipe uses – wanted mine a little more tart than sweet. This will definitely be a repeat cocktail this summer and could easily be made in larger batches. We even planted fresh mint in our new garden – cheers!
Frozen Mojitos
Serves 2
Adapted from Bobby Flay
1/4 cup simple syrup (equal parts sugar and water boiled together until sugar melts)
3 limes, juiced (original recipe calls for 2 limes)
12 fresh mint leaves, plus mint sprigs for garnish
4 ounces white rum
2 cups crushed ice
Combine simple syrup, lime juice and mint leaves in a blender and blend until combined. Add the rum and crushed ice and blend until frothy. Pour into 2 rocks glasses and garnish with mint sprigs and a lime wedge.
